Aside from easy money the celebrity gets good publicity and is able to network with influential folks who can, in turn, help them advance their career. It’s ultimately a business where altruism is often an afterthought and most of the proceeds go towards “administrative costs”. Some NPO/NGOs also serve as fronts for illicit activities, often doubling as Trojan horses in foreign countries for Intelligence operatives.
