Latina here with an English bf. Yeah, beans on toast sounded disgusting to me too when I heard about it. But it’s canned beans in a tomato sauce. It was better than I expected. Actually it’s quite good. People also eat those beans in sauce with the English breakfast.
I was in the UK so I know all about it. Heinz beans are a little too sweet, homemade can be pretty good on toast. Molletes are still better though :P:
I lived in Mexico for a while and the first time I saw this I was thinking to myself “ oh hell no, bean spread on toast?? I don’t fucking think so.” But it’s actually really good.
The crusty bolillo bread makes for a good contrast in texture. Chorizo and oaxaca (or panela) cheese take it to the next level. Chilaquiles are my all time favorite Mexican breakfast dish…
I miss pibil more than anything. Haven’t had it since I left Mexico 🙁
We used to have some fantastic cochinita pibil here in SF…until they gentrified the Mission District grrrrr >:(. Now it’s a lot harder to find. It’s from a specific state in Mexico, if you do a Yelp search under Yucatan/Yucatecan you’ll be able to find a restaurant that serves it. Other alternative is to make your own, which in a slow cooker is actually pretty easy. Line the inside of the cooker with banana leaves for a more authentic flavor.
